Glass has much more emissivity in infrared, so it would be worse if it was touching the pot and not the box, where metal would be better for touching the pot and not the box, conducting heat to the pot, as long it was hotter than the pot.
I think the only useful function for glass is to let visible light in and block IR. I think bottom tray of shiny aluminum with spacers above and below would be the best support, reflecting heat back onto the pot where it belongs. I haven't made a box cooker in years, but if I did today, I'd build it with panels of fiberglass coated with aluminum foil, shiny side out, on both sides. |
