Water Pasteurization Indicators (WAPI’s)
Materials and Fabrication Process

Materials:
1. Collect new or “recycle” used see-through ballpoint pens (if polycarbonate tubing is not available).
2. Roll of fish line – to be cut into 30 cm lengths for each WAPI.
3. One large flat washer (preferably stainless steel) that fits around the ballpoint pen tubing.
4. Two smaller flat washers, if possible stainless steel.
5. Myverol 18-06 K food emulsifier powder, from Mitsubishi International Food Ingredients.
(Previously Kodak and Quest International provided the Myverol product).

Fabrication Process:
1. “Recycle” or buy clear see-through ballpoint pens.
2. Saw or cut clear part of ballpoint pen tubing into lengths of 5 to 7 cm with saw or pipe cutter.
3. Heat up one side of the cut tube with flame, or small propane torch.
4. Crimp heated side completely closed with a pair of pliers.
5. After cooling off, put Myverol 18-06 K food emulsifier powder in the tube - about 1 cm when holding tube vertically.
6. Slide large washer over the open end of the tube.
7. Heat up the open side of the tube and crimp that side completely closed.
8. After cooling, drill a hole in each flattened end of the tube (for fish line).
9. Tie a small washer to 30 cm of fish line.
10. Thread the fish line through the hole at one side of the tube, then through the large washer and then through the hole of the tube at the other end.
11. Tie the fish line end to another small washer.
12. Place WAPI vertically in water of over 70 C. Verify Myverol solidified.
13. Turn WAPI upside/down with solidified Myverol on top, and place again vertically in water of over 70 C. Verify Myverol is melting and going to bottom of tube.
14. Verify that WAPI tube is hermetically sealed on both sides by checking that no water got into the tube.
