This is light and easy and has become a favorite of mine on sunny days when I'm home. I just chop up a cup or cup-and-a-half of vegetables in season (summer squash is burgeoning right now), making sure to include some onions and garlic for health and flavor. I put the veggies into my little three-cup black pot (a backpacking pot that REI Outlet has awhile back... the bottom was already black, so all I had to do was paint the top of the lid) and toss them with a bit of healthy oil and seasonings, Then I nestle a frozen Chinese steamed bun (aka Cha Siu Bao, at least on the brand available at my Safeway) in on top of the vegetables (leave the little paper attached to the bun, to prevent it from getting too soggy as liquid cooks out of the vegetables). I put it out in a panel or funnel cooker (suitably 'greenhoused', of course) for an hour or so and I've got lunch. If I want more protein I have a glass of chocolate milk on the side, or a bit of leftover meat if we've got some around. Slightly sprouted legumes could also be used to up the protein content. I love this. It tastes good, helps keep my weight down, and makes me feel very healthy!
