Why not make one of each and experiment? Thinner is always better, given the same material, but if the thermal conductivity is different between porcelain and porous clay, then that must also make a difference.

My instinct is that your (and your potter's) approach is correct, but I'd love to see your data. It seems to me that thin dense walls will work best. You could perhaps do comparison tests using any similarly-sized pot which feels lighter and thicker, not necessarily one especially made.
