My article on suncooking with barely-sprouted grains and legumes was one of several caught in the crossfire in the recent war of the evil spam-bots, but fortunately Tom had copied it into our wiki, so you can still read it at:

Check it out. You can make wonderful sunsoups with a base of mixed barely-sprouted grain/legume combinations, and you can use barely-sprouted beans/legumes in just about any way you might use unsprouted ones. They cook somewhat faster (and some don't need to get as done to be palatable and digestible), are better for you and much easier to digest, and if they are just barely sprouted they retain most of the characteristics that grain or bean (in other words, your chili will still basically taste/feel like chili).
